Fried Soft Crabs (Dan Gill)

Place an inch or so of good cooking oil in a cast iron skillet. Heat almost to smoking point

Flour and season the crabs and carefully drop them in the hot oil. It will splatter.

Turn them once to get both sides crispy and brown.
